Oatmeal Brie Cubes

In a bowl, mix together oatmeal, breadcrumbs, salt, pepper and mustard. Beat eggs in a small bowl. Cut cheese into bite-sized cubes and dip each cube into the beaten egg. Coat evenly in oatmeal mixture. Chill until required. To make dip, place cranberries, lime peel and juice in a saucepan. Bring to boil, cover and cook until tender (1-2 mins). Place in food processor or blender and process until smooth. Place in a small serving dish. Half-fill a deep pan or fryer with oil. Heat to 180C (350F), or until a cheese cubes sizzles immediately. Fry about 6 cheese cubes at a time until pale golden in colour. Place cooked cubes on paper towels to absorb excess oil. Arrange on plate and garnish with lime wedges, bay leaves and cranberries. Serve with cranberry dip. Makes 20

Soft breadcrumbs    90g (3oz/1½ cups)
Fine oatmeal    30g (1oz/¼ cup)
Salt    ½ tsp.
Ground black pepper    ½ tsp.
Dry mustard    ½ tsp.
Eggs    2
Brie or Camembert cheese    250g (8oz)
Vegetable oil for frying    Enough to cook in.
Lime & bay leaves    Garnish.
Cranberries    90g (3oz/¾ cup)
Grated lime peel and juice    1 lime
Caster sugar    15g (½ oz/3 tsp.)
