Cheese Sticks

Preheat oven to 200C (400F/Gas 6). In a bowl sift flour, salt, mustard and cayenne. Cut butter into pieces and add to bowl. Rub in until resembling fine ‘breadcrumbs’. Using a fork, stir in cheese and egg until mixture clings together. Knead into smooth dough. Cut pastry into 4 pieces. Flavour one piece with capsicum (peppers), one with herbs and one with garlic. Knead each piece lightly. Roll out one piece at a time to a strip measuring 10cm (4in) wide and 0.5 cm (¼ in) thick. Using a sharp knife cut into 0.5 (¼ in) strips. Arrange in straight lines on a greased baking tray. Cook for 5-8 minutes until pale in colour. Cool on a wire rack. Makes 100+ sticks

Plain flour    250g (8oz/2 cups)
Salt    ½ tsp.
Cayenne pepper    ½ tsp.
Dry mustard    ½ tsp.
Butter    125g (4oz/½ cup)
Grated Cheddar cheese    125g (4oz/1 cup)
Egg    1
Finely chopped red & yellow peppers (capsicums)    4 tsp.
Crushed garlic    1 clove
Fresh basil & parsley (chopped)    4 tsp. (garnish)
