Almond Brussels Sprouts

Trim stalks off sprouts and make a cut across each one. Cook in boiling water for 4-5 minutes until tender. Drain well and place in a warm serving dish.
While sprouts are cooking, melt butter in a small frying pan. Add flaked almonds and garlic and fry until almonds are golden brown. Stir in lemon peel and juice and salt and pepper. Mix well.
Sprinkle almond mixture over sprouts. Garnish with freshly chopped parsley.
