Christmas Pudding

In a large mixing bowl, put mixed fruit, cherries, prunes, almonds, carrot, apple, orange peel and juice, treacle, stout and the brandy. Mix well. Stir in butter, egg, sugar, flour, allspice and breadcrumbs. Blend well. Cover and leave in a cool place until ready to cook. Use a greased round ceramic/glass bowl or a metal pudding mould, measuring 12.5cm (5in) in diameter. Fill bowl with mix and cover with foil or a well fitting plate. Bring a half-filled saucepan of water to the boil and place bowl carefully into the pan so that the water doesn’t lap over onto the top of the pudding. Cover and cook gently for 6 hours. When cooked, turn onto a serving plate. Spoon over warmed brandy and set alight (Ooh Arr, pretty). Serve with custard and whipped cream. Serves 8

Mixed dried fruit    500g (1lb/3 cups)
Chopped prunes    60g (2 oz/½ cup)
Chopped almonds    60g (2 oz/½ cup)
Chopped glace cherries    45g (1½ oz/ 1/3 cup)
Grated carrot    45g (1½ oz/¼ cup)
Grated cooking apple    45g (1½ oz/¼ cup)
Grated peel & juice of orange    1
Black treacle (molasses)    3 tsp.
Stout    90ml (3fl oz/ 1/3 cup)
Brandy    3 tsp. + extra
Melted butter    60g (2 oz/¼ cup)
Soft, dark brown sugar    60g (2 oz/ 1/3 cup)
Plain flour    60g (2 oz/½ cup)
White breadcrumbs    60g (2 oz/1 cup)
Ground allspice    ¾ tsp.
